The UnProcessed profiles are the fastest. If you want to keep WTV format then use WTV unprocessed. apples to apples, TS unprocessed is the fastest profile (and you can enable Skip Remuxing and Skip copying to further speed it up if you're keeping the TS or WTV formats).
